The Very Best Gingersnaps You Will Ever Make
Ingredients
- 2 Cups flour
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ground ginger
- 1/2 tsp. ground black pepper (if possible use mill with very fine grind)
- 1/4 tsp. salt
- 1/2 cup butter, room temperature
- 1 cup white sugar, and a little more for rolling cookies
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 1 tsp. vanilla
Directions
- Preheat oven to 350
- Sift all dry ingredients together in a medium bowl
- In a large bowl, with electric mixer, cream butter and both sugars
- Add egg, molasses, and vanilla
- Gradually add in dry ingredients
- Scoop doug with small to medium ice cream scoop
- With slightly damp hands, roll dough into balls and then rolls the balls in white sugar
- Place balls on a pan
- Bake 12-13 minutes, rotating halfway through
- Leave on sheet until they set up a little, then transfer to wire rack
