Sandwich Bread
Ingredients
- 522 grams water
- 375 grams whole milk
- 21 grams active dry yeast
- 1320 grams bread flour
- 24 grams fine sea salt (22 grams if using salted butter)
- 63 grams white sugar or honey
- 9 Tbsp (126 grams) softened unsalted butter
Directions
- Combine water and milk. Heat on stove to 98 degrees F. Stir in yeast and set aside for 10 minutes
- Whisk together flour, salt, and suger
- Slowly add liquid to dry ingredients. Mix until dough is smooth
- Work butter into dough and knead
- Form dough into ball and place in lightly greased bowl. Cover and let rise until doubled
- Lightly grease three 9x4.5 inch loaf pans
- Deflate dough and divide into three equal portions
- On a lightly floured surface, roll with a rolling pin until 1/2 inch thick and 9 inches wide (same width as the loaf pan)
- Tightly roll dough into a log, then pinch seam closed and place in loaf pan
- Cover with greased plastic wrap and allow to rise until dough top is above pan edge
- Bake at 350 degrees F for 35 - 40 minutes or until internal temperature reaches 190 degrees F
- Allow to cool completely before slicing
