Pork with Raisin Sauce
Ingredients
- 1 to 1 1/4 lb peppercorn pork tenderloin
- Creole or cajun seasoning
- 1 cup raisins
- 1 tsp finely shredded orange peel
- 1/3 cup orange juice
- 1 tsp. finely shredded lemon peel
- 3 Tbsp lemon juice
- 1/4 cup white wine vinegar
- 1/4 cup sugar
- 1 Tbsp dry mustard
- 1 Tbsp Worcestershire sauce
- 1/4 tsp ground allspice
- 1/4 tsp ground ginger
- 1 2-inch stick cinnamon
Directions
- Preheat oven to 425. Place pork on a rack in shallow roasting pan. Sprinkkle lightly with seasoning. Roast, uncovered for 30-35 minutes or until an instant read thermometer inserted in center registers 155. Remove from oven. Cover and let stand 5 minutes until thermometer registers 160.
- Meanwhile, for sauce, in a medium saucepan combine raisins, 1/3 cup water, orange peel and juice, vinegar, sugar, mustard, worcestershire sauce, and spices. Bring to boiling; reduce heat. Simmer, uncovered, for 8 to 10 minutes or until desired consistency. Remove cinnamon stick. Slice pork, serve sauce with pork. Makes 4 servings.
