Chicken Enchiladas
Ingredients
- 1 can green enchilada sauce
- 1 can red enchilada sauce
- 1 8oz package cream cheese
- Most of the white meat from one rotisserie chicken, shredded
- 9 - 10 tortillas
- 1/4 tsp cayenne pepper
- Shredded pepper jack cheese (to cover top)
Directions
- Melt cream cheese with both cans of enchilada sauce
- Add cayenne pepper and chicken and mix
- While sauce is heating, cook tortillas if using raw ones
- Put a layer of sauce in the bottom of a 9x13 pan
- Fill each tortilla with the sauce/chicken mixture and place in pan
- Top with shredded pepper jack cheese and bake at 350ยบ for 25-30 minutes or until the cheese is golden brown
